MulZi-collagen Carob Chocolate Muffins


  • 1 cup all-purpose flour
  • 1 cup carob flour
  • 1/2 cup MulZi-Collagen powder
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plain Greek yogurt
  • 1/2 cup dark chocolate chips or chunks



  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, carob flour, MulZi-collagen powder, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, honey or maple syrup, eggs, vanilla extract, and Greek yogurt until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the chocolate chips or chunks into the batter.
  6. Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
